Ingredients:
1 tbsp olive oil
1 medium onion – chopped
2 garlic cloves – minced
2 medium carrots – chopped
2 celery stalks – chopped
1 tsp thyme
1 bay leaf
2 quarts (8 cups) chicken stock
1 cup brown rice
1 1/2 cups chopped cooked chicken
