French Toast Roll-ups

These are super tasty, easy to make, and are great for a quick warm breakfast before school/work!

 

Ingredients:

8 oz. cream cheese – softened

1 egg yolk

1 cup sugar

24 slices of bread – crusts removed

1 tbsp cinnamon

3 tbsp butter – melted

 

First, cut off all of the crusts on your bread.

Next, combine the cream cheese, yolk and 1/4 cup of the sugar in a bowl.  Set aside.

Gingerbread

This is a great spicy cake that goes wonderfully with a cup of coffee or hot tea!  Add a little caramel sauce to bring out the flavor!

 

Ingredients:

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter

1 egg

1/2 cup honey

2 1/2 cups flour

1 1/2 tsp baking soda

2 tsp cinnamon

2 tsp ground ginger

1 tsp ground cloves

1/2 tsp salt

1 cup hot water

 

First, preheat the oven to 350 degrees.  In a large bowl, cream together the white sugar and the butter.

This is by far, one of the most moist, delicious breads!  The Greek yogurt gives it a great creamy taste and you can use either fresh or frozen strawberries!

 

Ingredients:

1/2 cup butter – melted

3/4 cup sugar

2 eggs

1 container of Greek yogurt (I used honey flavored)

1 3/4 cup all purpose flour

1 tsp vanilla

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp cinnamon

1 cup strawberries – chopped (fresh or frozen and thawed)

Spiced Applesauce Cake with Caramel Glaze

Got some leftover applesauce you are looking to use up?  This cake is AMAZING!  It is super moist and full of spices that just scream fall!

 

Ingredients:

2 cups flour

1 1/2 tsp baking soda

1 tsp Kosher salt

1/4 tsp black pepper

2 tsp cinnamon

1 tsp ground ginger

1/4 tsp allspice

2 eggs

1 cup sugar

1  1/2 cups applesauce (I used leftovers from my Homemade Applesauce recipe)

2/3 cup vegetable oil

1 tsp vanilla

 

Glaze topping:

1/2 cup butter

2 tsp milk

1/2 cup brown sugar

Bulk Apple Pie Filling

Bulk Apple Pie Filling

A great way to cook with some of the apples picked fresh from the orchard is to make up some apple pie filling!  I like to make a large pot of it, make one pie and freeze the rest of the filling in containers to be thawed out and used for fresh, homemade pies later in the season!  It is super easy to do…my youngest son even helped me out with this one!
