Easy Chicken and Rice Soup

Looking for a way to use up some of your left over roaster chicken or turkey?  This soup is super easy and only takes about 40 minutes with prep and cook time!

 

Ingredients:

1 tbsp olive oil

1 medium onion – chopped

2 garlic cloves – minced

2 medium carrots – chopped

2 celery stalks – chopped

1 tsp thyme

1 bay leaf

2 quarts (8 cups) chicken stock

1 cup brown rice

1 1/2 cups chopped cooked chicken

Cheeseburger Soup

This is a great way to trick the kids into eating their veggies!  Chocked full of vegetables with a great cheesy, creamy taste!

 

Ingredients:

1 lb ground beef

1 cup chopped onion

1 cup sliced carrots

2 tbsp butter

4 cups diced potatoes

1/2 pkg frozen corn

1/2 pkg frozen peas

1/4 tsp celery salt

1 tsp basil

1/4 tsp parsley

1/4 tsp garlic salt

1/4 cup flour

3 cans chicken broth

1/4 tsp paprika

16 oz Velvetta cheese

1/4 cup sour cream

salt/pepper to taste

Pasta, Sausage and Bean Soup

Pasta, Sausage and Bean Soup

This is a great, hearty soup that full of flavor!

 

Ingredients:

1 tsp olive oil

1 lb pork sausage

2 carrots – chopped

2-3 celery stalks – chopped

2 tsp minced garlic

1 tsp basil

1 tsp rosemary

1/2 tsp red pepper flakes

2 large cartons of chicken broth (around 64 oz)

2 cans of diced tomatoes with juices

2 cans of kidney beans – rinsed

1/2 box macaroni noodles

Spicy Beef and Cabbage Soup

Spicy Beef and Cabbage Soup

This is by far, my absolute favorite soup!  It has such a great flavor, and a wonderful aroma when cooking!  The “spicy” in the title refers to all of the spices added, not a hot flavor.

 

Ingredients:

1 lb ground beef

1 large onion – chopped

1 garlic clove – minced

4 cups beef broth

3 cups water

2 stalks celery – chopped

2 large carrots – chopped

3 bay leaves

3 cups chopped cabbage

Summer Squash Soup

Summer Squash Soup

I started out teaching my boys how to be healthy at an early age.  Plenty of exercise, good night’s sleep and most importantly to eat healthy!  I cook everything from scratch and I prefer to use only fresh, locally grown items when I can.  We love to hit up the local farmer’s market and check out all the goods!  This week, we found an abundance of yellow squash, also known as summer squash.
