Oatmeal Cranberry Dark Chocolate Chunk Cookies

The title is a mouthful, but I promise you will end up with a mouthful of these awesome cookies as soon as they are out of the oven!

 

Ingredients:

2/3 cup butter – melted

2/3 cup brown sugar

2 large eggs

1 1/2 cups old fashioned oats

1 1/2 cups all purpose flour

1 tsp baking soda

1/2 tsp salt

5 oz. Craisins dried cranberries

2/3 cup dark chocolate chips or chunks

 

First, preheat oven to 375.  Next, in a large bowl beat together the butter, brown sugar and eggs.

Next, add the flour and the oats.

Mix up well.  Then add the baking soda and salt and mix them in thoroughly.

Last, add the chocolate and the Craisins and stir them in.

Spray a 9×13 baking sheet and roll small balls of dough, spacing them out.  Bake for 10-12 minutes until done.

While the cookies are baking, I always wrap up 1/2 of the raw dough in plastic wrap and then foil and store away in the freezer.  That way when I want some homemade cookies, I can just slide off as many as I want from the roll and bake!

Once the cookies have finished baking, remove them from the baking sheet and place them on cooling racks.  Enjoy with a large glass of milk!
