
I LOVE summer time! All of these fresh picked berries are just awesome for someone who loves to cook! We have tons of blackberries growing wild in my backyard. Every summer, my boys and I pick all the the fresh blackberries and after eating a fair share of them right off the vines, I use the remainder of them to bake with! This is a very simple recipe that is great for a backyard party or just a yummy after dinner treat!
Ingredients:
2 cups blackberries
1 1/3 cup all purpose flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 egg
3 tbsp butter – melted
1 tsp vanilla
Preheat oven to 375 degrees. Spray a 9×9 baking dish with cooking spray and pour in the 2 cups of blackberries.
In a large bowl – add all of the dry ingredients and mix well.
Pour in the melted butter, egg and vanilla.
Mix the ingredients together. This should result in a crumbly mixture, not a wet mixture.
Once mixed and crumbled, pour the crumbles over the blackberries in the dish.
Once the berries are completely coated with the flour mix, place the dish in the oven and bake for 30-40 minutes. The crumbly top will brown and cook through. Serve with a dollop of cool whip and some fresh berries for garnish!
Any uneaten portions can be frozen in individual plastic containers with lids to enjoy another day!
