
This is a super simple, quick recipe that you can make using your left over Roaster Chicken!
Ingredients:
1 cup cooked, chopped leftover roaster chicken
1 can diced tomatoes with green chilies
1 cup black beans – rinsed and drained
1 cup frozen corn (or 1 can of corn – drained)
2 cups water
2 tsp chicken bouillon
1 cup instant rice
toppings – shredded cheddar cheese, sour cream, tortilla chips
First step is the open the can of black beans and rinse them thoroughly.
Next, in a large soup pot, combine all of the ingredients but the toppings. Bring to a boil and then reduce heat and allow to cook on low for 15 minutes.
While the soup is cooking, start getting your toppings ready!
After the 15 minutes is up, ladle the soup into a bowl and serve with shredded cheese, a dollop of sour cream and some crushed tortilla chips!
This soup can easily be put into a freezer safe plastic container and kept for 2-3 months!
