
My boys LOVE Sunday morning breakfast at our house! That is the only morning of the week that we don’t have something going on. We sleep in and then mommy gets up and makes pancakes! This recipe makes fluffy, mouth-watering pancakes that will fill them up!
Ingredients:
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
6 tbsp sugar
4 tbsp vegetable oil
2 cups milk
2 eggs
1 tsp vanilla
First, mix all of the dry ingredients together (the first 5 ingredients listed).
Next, add the wet ingredients and mix by hand.
Once the mixture has been blended by hand, pull out a mixer to make sure any lumps have been mixed in as well.
Turn your burner on medium heat and spray your frying pan with cooking spray. Allow the pan to heat up and then begin pouring pancake-sized portions onto the pan to cook.
Cook the pancakes for 1-2 minutes on each side, until golden brown.
Serve the cooked pancakes with a side of butter and your favorite syrup!
I like to switch things up from the traditional pancakes and add a 1/2 cup of blueberries, strawberries or chocolate chips to my mix!
This recipe makes a bunch of extra pancakes. I like to wait for the extras to cool down, and then place 2-3 pancakes in a resealable bag and pop them in the freezer. These make a great homemade breakfast during our weekday school ritual. Just separate on a plate and microwave for 1-1 1/2 minutes and serve!
