Who knew that making fudge could be so easy?! No need to purchase it from one of those expensive gourmet candy stores when you can make your own variations at home!
Ingredients:
2 tbsp butter
2/3 cup evaporated milk
1 1/2 cups sugar
1/4 tsp salt
2 cups mini marshmallows
2 cups milk chocolate chips
1 tsp vanilla
In a large sauce pan, combine the butter, milk, sugar and salt. Bring the mixture to a boil, stirring constantly for 4 1/2 minutes.
Add the chocolate and marshmallows and begin stirring them while they melt.
As the chocolate and marshmallows melt, add the vanilla and stir.
Pull the chocolate mixture from the heat and set aside. Quickly line a 8×8 pan with foil or wax paper. Pour the chocolate into the pan and spread out evenly.
Place the dish in the refrigerator and allow to cool and harden – about 1 hour. Pull out after 1 hour and cut into bite sized pieces.
You can do all sorts of variations using this basic recipe. You can add change the chips up and use butterscotch or white chocolate or even mint or peanut butter chips. You can also add walnuts or peanuts to the recipe to change things up a bit.
Fudge can also be stored in the freezer and thawed out as needed for a quick treat! Just seal in plastic bags, making sure to get rid of all of the air in the bag, and store up to several months!
