
I love oatmeal, but sometimes a breakfast bar makes breakfast on-the-go much easier! This is a great healthy alternative that the kids will even love!
Ingredients:
2 cups oats
1 cup milk
1 banana
1/2 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp vanilla
1/2 cup shredded coconut
1/2 cup Craisins
First, preheat the oven to 325 degrees. Next, in a large bowl, combine the oats, sugars, baking powder and spices – mix well.
Next, add the applesauce, banana and milk. Mix well.
Then add the eggs to the mixture.
Once the oatmeal mixture has been thoroughly mix, add the coconut and Craisins and stir them in.
Pour the mixture into a greased 8×8 baking dish (or 9×13 for a crispier, thinner bar) and bake at 325 for 45-60 minutes, depending on your oven. Once cooked through (check with a toothpick), allow to cool and then cut into sections and serve.
Once the bars have totally cooled, place each bar in a sealable plastic bag, ensuring that the air has been sealed out. Store in the freezer until you are ready to have one of these yummy homemade treats for breakfast! Pop in the microwave and enjoy!
