Peanut Butter Muffins

Peanut Butter Muffins

Peanut butter anything is always good in my book!  These muffins have a great, rich taste and make for a super yummy Sunday morning breakfast or even an afternoon snack when the kids get home from school!

 

Ingredients:

1 cups all-purpose flour

1/2 cup sugar

1 tbsp baking powder

1/2 tsp salt

1/2 cup peanut butter

3 tbsp butter

2 eggs

1 cup milk

cinnamon-sugar mix (I mix mine up in a plastic bag)

jelly – optional

 

To start, preheat your oven to 400 degrees.  Next, combine the flour, sugar, powder and salt in a large bowl.

Add in the peanut butter and 2 tbsp of the butter (which should be softened in the microwave to allow for mixing).  Stir the ingredients to create course crumbs.

In a separate bowl, beat together the milk and eggs.

Once beaten together, add the milk/egg mixture to your dry ingredients.  Mix until blended.

Make sure to spray your muffin pan with cooking spray, and then add equal portions of the dough to the pan.

Bake the muffins for 12-15 minutes or until a toothpick comes out clean.  The muffins will have a nice browned look to the top.  Next you will use a basting brush and brush the last 1 tbsp of melted butter on to the muffins.

Then lightly sprinkle them with the cinnamon sugar mix.  It should be done right after basting, to insure the mixture will stick as the butter cools.

The muffins are then ready to serve!  They can be sliced open and served with a side of jelly – make for a new twist on a pb&j sandwich!

Any leftover muffins can be easily bagged in a plastic bag and frozen to keep for a treat another day!
