Easy Strawberry Crisp

There is nothing better than a pick-your-own farm where you and your family can pick your own fresh produce.  But, if you are anything like my family, you get so wrapped up into it that you don’t realize you have already picked 10 lbs. of fresh strawberries!  Strawberries are an amazing fruit that you can do many things with, but you have to act fast because they don’t have much of a shelf life!  The first recipe that immediately came to mind is Strawberry Crisp.

Simple ingredients, wonderful result!  First step is to rinse all of the strawberries and cut off the stems.  You will need 4 cups of sliced strawberries for this recipe.

Strawberry Crisp


4 cups strawberries – sliced

½ cup + 1 tbsp brown sugar

½ cup oats

6 tbsp. flour

6 tbsp. butter

4 tbsp. chopped almonds (optional)


Preheat your oven to 350 degrees.  Pour the fresh cut strawberries into a bowl and lightly toss with 1 tbsp. of brown sugar and set aside.

In a separate bowl, combine together the rest of the ingredients and mix together well.

Spray a 9×11 baking pan and pour the strawberries in first, making sure to coat the bottom of the pan.  After the strawberries are in, cover them with the oat mix.

Bake for 20 minutes at 350 degrees.  Serve it hot with a scoop of vanilla ice cream, or my personal favorite – chilled in the fridge!

Another note:  Make sure you either use up or freeze the remaining fresh strawberries or you will lose them!  So many great strawberry recipes out there – you can even use the frozen strawberries for Frozen Strawberry Smoothies!
