
Grilled Fajita Chicken Strips:
These are easy to make and great to have around for fajita’s, salads, taco’s, bbq sandwiches… you name it. They thaw quick and taste like they came right off the BBQ.
For Fajita’s I like to have a plate of peppers and tomatoes ready to load up on.
I forgot to get pics on the grill, but it is really simple. Put all he chicken on the grill and sprinkle with seasoning of your choice (we use salt free chili seasoning for a nice taste). Cook it through and plate it up. We use 5 pounds of boneless skinless chicken breasts that were on sale this week. You should be starting with something like this:
Simply let rest a while to solidify better. Slice up each chicken breast into fajita size pieces and plate out of the way. You should end up with something like this:
At this point it is ready to eat: We dined off it right away with fajita’s. They were so tasty!
All the rest of the chicken can be bagged up into portion sized bags. I used about 1 cup as a rule per bag. This is perfect for fajitas for two or for a couple salads for lunches.
